Welcome to fall!
It is my favorite season, as I love nature's beautiful colors and the chillier morning in early November. I love the seasonal fruits such as pears and apples. There are so many ways to prepare them, not to forget, eating them raw. I use them in various ways from salads to appetizers, snacks, and desserts. Today, I will share with you one of my very favorite fall salads.
1 cup Boston lettuce and radicchio, chopped
2 tsp. vinaigrette
2 halved grilled medium pear, cored
2 Tbsp. chopped Roquefort or Blue Cheese
4 tsp. chopped walnuts
Honey
2 whole wheat or cranberry walnut bread slices (optional)
Mix the lettuce with the vinaigrette and divide among 2 small plates. Top each with one-half pear, cheese, and walnuts. Drizzle over a little bit of honey. Serve immediately with a slice of whole wheat or cranberry walnut bread (optional).
Comments: This can be a great breakfast or snack. You can increase the salad ingredient for a lunch-sized meal. Makes 2 servings.
