A healthy alternative to the traditional french recipe.
For those who like Crème Brulée (which is generally made from cream), this is a good alternative with lower fat and less sugar than in a classic recipe.
2 cups of milk
1/3 cup sugar
1 vanilla bean
3 eggs
1 yolk
Caramel: 1/2 cup of sugar plus 1/4 cup of water
6 ramekins
Preheat oven to 350°F.
Prepare a Bain Marie container with warm water to go in the oven later.
Make a caramel by melting 1/2 cup of sugar and 1/4 cup of water over medium heat. Cook until caramel forms. Pour immediately into the ramekins to line the bottom and sides.
Place milk, sugar, and vanilla bean in a pan. Bring to a boil. Beat the eggs until foamy in a bowl. Add the hot milk mixture slowly to avoid cooking the eggs. Strain and divide among the ramekins. Place in the prepared bain-marie and cook for 40 minutes in the oven or until the crème is set. Refrigerate and serve cold.
Sprinkle a little bit of brown sugar in the middle of the creme and torch till brown.
Option:
Coffee flavor: add granulated coffee to taste with the milk
Chocolate flavor: add cocoa powder to taste with the milk
Orange flavor: 1 Tbsp. Grand Marnier or Mandarin Liquor or 1 Tbsp. orange water
Tea flavor: infuse warmed milk with a couple of tea bags. Strain and reheat to get hot again before use.
Raspberries: add a few raspberries per ramekin, while pouring liquid creme in the ramekins and before cooking.
